We hold the card when a tab opens, top the hold up as it grows, and only charge what a guest actually drank. Nobody gets stopped mid-order unless the card genuinely declines.
Opening card hold

Authorized (not charged) the first time a guest orders past their free drink tickets.
Force-settle ceiling

When a tab hits this, we ask the guest to close out and set their own tip, then roll a fresh tab. Nothing is auto-tipped.
Standard gratuity
20%
Applied when staff close a tab at end of shift. Guests who close out themselves pick their own tip.
